Eggplant Teriyaki
Ingredients:
2 medium eggplants
2 tbsp gluten free soy sauce
2 tbsp sesame oil
2 tbsp hoisin sauce
2 tbsp brown sugar
2 tsp rice vinegar
1/2 tsp fresh grated ginger
1/4 tsp ground garlic
Teriyaki glaze
Red Pepper flakes
Optional sesame seeds and green onion (topping )
Directions:
Cut eggplant into cubes
Place eggplant into pan and allow to become golden brown
Prepare marinate ; soy sauce , sesame oil , hoisin sauce , brown sugar , vinegar , ginger , garlic and red pepper flake
Add marinate to pan and allow the marinate to caramelize
Add teriyaki glaze if desired
Allow the eggplant to cook for about 10-15mins
Top with sesame seeds ad green onions
Serve with rice .
