Eggplant Teriyaki

Eggplant Teriyaki



Ingredients:

  • 2 medium eggplants

  • 2 tbsp  gluten free soy sauce

  • 2 tbsp sesame oil

  • 2 tbsp hoisin sauce

  • 2 tbsp brown sugar

  • 2 tsp rice vinegar

  • 1/2 tsp fresh grated ginger

  • 1/4 tsp ground garlic

  •           Teriyaki glaze

  •         Red Pepper flakes

  •         Optional sesame seeds and green onion (topping )


Directions:


  1. Cut eggplant into cubes

  2. Place eggplant into pan and allow to become golden brown

  3. Prepare marinate ; soy sauce , sesame oil  , hoisin sauce , brown sugar , vinegar , ginger , garlic and red pepper flake

  4. Add marinate to pan and allow the marinate to caramelize

  5. Add teriyaki glaze if desired

  6. Allow the eggplant to cook for about 10-15mins

  7. Top with sesame seeds ad green onions

Serve with rice .
