Start by washing all vegetables cut the eggplant in half and scarp out the inside of the eggplants. In a pan add the cut up squash m zucchini,onion and rice sauté till tender. Add mixture to the eggplant and bake on 350 degrees for 45 mins. or until soft . When finished baking top with shredded carrots walnuts and basil .
