5. Layer eggplant, zucchini, squash and tomato in a spiral pattern until pan is full.
6. Prepare your herb drizzle by combing minced garlic, chopped herbs and 4 Tbsp of oil and salt and pepper mix and pour over the top of vegetables
7. Cover dish with tinfoil and bake for 40-45min covered remove tinfoil and cook for an additional 15-20min until the vegetables are soft.
