2 eggplants, sliced

2 zucchinis, sliced

2 Tbsp. fresh basil

1 teaspoon oregano

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup olive oil

Instructions:

1. Preheat oven to 375 degrees.

2. Prepare your vegetables by slicing zucchini, eggplant squash and tomatoes

into thin 1" pieces and toss them in a bowl with some salt and pepper.

3. In a saucepan add tomatoes, onions, garlic, bell peppers and sauté add to a blend to puree

4. Add blended mixture to bottom of a greased pan

5. Layer eggplant, zucchini, squash and tomato in a spiral pattern until pan is full.

6. Prepare your herb drizzle by combing minced garlic, chopped herbs and 4 Tbsp of oil and salt and pepper mix and pour over the top of vegetables

7. Cover dish with tinfoil and bake for 40-45min covered remove tinfoil and cook for an additional 15-20min until the vegetables are soft.
